Going out:

Shenannagins:
69 Mitchell Street (across the road from Melaleucas)
Right across the road from Melaleuca's on Mitchell Street. Live music is found here sometimes and you can get Guinness on tap. It isn't the biggest pub in the world so get there early to guarantee a seat.

The Victoria Hotel:
Smith Street
A really popular spot with backpackers in Darwin. This is usually the spot to meet up in after your 3-day tour in Kakadu. Fun and games, along with decent food can be found upstairs.

Globetrotters:
97 Mitchell Street
You can find an in-house beer in this pub. This bar is always full with backpackers who are staying in the hostel and many others. Always lively.

Rorke's Drift:
46 Mitchell Street
If the heat in Darwin is a bit too much for you (which is very likely) and you fancy a few outdoor coldies, this is the pub for you. Also on Mitchell Street, there is a big beer garden in this pub and is always full.
